Why Massage?
Leafy greens like Kale are tough and can be bitter when eaten raw. Massaging the kale breaks it down and makes it easier to eat and digest without heating.
You need a generous amount of oil...
The key to a great massage is to add a generous amount of oil. Pick whichever oil you prefer.
Add salt.
Then massage thoroughly. At least for a couple of minutes. The kale should become soft and dark. The flavor should be much softer, and the oil and salt should bring out some of the subtle flavor of the kale.
Eat this way or use in a Kale Salad.
