Salmon is a fish known for its orangey, pinkish "salmon-colored" flesh caused by carotenoids and ability to leap out of the water. They are carnivores, eating smaller fish, squid, and other creatures. They have a unique life cycle, born in freshwater and moving to the sea as they get older, only to return back to their freshwater origins to begin the next generation. Salmon are a favorite food for black bears to hunt directly out of rivers as the salmon make their trek to freshwater to spawn.
Salmon meat is oily, containing a high amount of omega-3 fatty acids. It is consumed both cooked and raw and can be found whole, in cuts such a fillets, and raw in sushi and sashimi. Salmon roe (eggs), is also considered to be a delicacy.
