A family favorite made vegan. We've been making this recipe all the time.
This recipe uses Jiffy Vegetarian Cornbread mix. There is a difference between the regular mix and the vegetarian mix. The regular mix contains lard or animal fat, in case you weren't aware. I was not until pretty recently.
For a delicious twist, try adding jalapenos. I added diced, pickled sweet jalapenos, and it came out very nice!

Ingredients
2 Boxes Jiffy Vegetarian Cornbread Mix
Coconut Milk (1/3 Cup)
Water (1/3 Cup)
3 T Oil
Pickled Sweet Jalapeno (optional)
Instructions
Set oven at 400 degrees.
Combine Jiffy mix, coconut milk, water, and oil.
Add chopped sweet jalapenos if desired. Allow to rest for a minute before placing in the oven.
